Cinnamon Apple Granola with Cranberries and Walnuts

Ingredients

3 cups old-fashioned rolled oats

1 cup walnuts, coarsely chopped

1 cup pumpkin or sunflower seeds

1½ teaspoons ground cinnamon

¼ teaspoon freshly grated nutmeg

¾ teaspoon salt

¼  cup safflower oil

¼ cup honey

2 tablespoons apple juice

1 cup dried cranberries

 

Directions

Preheat the oven to 300°F. Line a rimmed baking sheet with parchment paper.

 

In a large bowl, mix together the oats, walnuts, pumpkin seeds, cinnamon, nutmeg and salt. In a medium bowl, whisk together the oil, honey and apple juice. Add the honey mixture to the oat mixture and stir to combine well.

 

Spread the granola onto the prepared baking sheet in one layer. Bake for 45 minutes, stirring every 10 minutes or so, or until golden brown. Let the granola cool before mixing in the dried cranberries.

 

Makes 4 cups granola / Serves 16
