Quinoa and Black Bean Power Bowl
Makes 1 serving
½ cup cooked quinoa
½ cup cooked black beans
½ cup cooked (or 1 cup raw) vegetables, such as bell pepper, onion, and tomato
2 Tbsp. shredded low-fat Mexican-blend or Cheddar cheese
2 Tbsp. salsa
Layer quinoa, beans, vegetables, cheese, and salsa in a container. Microwave before eating, or enjoy cold.
