Oatmeal Cranberry Peanut Butter Bites

You may be like us. In this time of social distancing, cooking and baking are nurturing activities that keep our spirits high. But as we strive to limit our trips to the grocery store, we wanted to share his simple recipe that includes ingredients you may already have in your kitchen or pantry.

Ingredients

1 cup rolled oats

3/4 cup plain oats or flaxseed meal

1/2 cup peanut butter

1/3 cup honey

1/2 cup dried cranberries

2 tablespoons flax seeds

 

Instructions
In a large bowl, mix everything together with a wooden spoon or spatula. If it gets too tough to mix together, use your hands!

Using a small cookie scoop, scoop mixture into palm of your hands, squeezing back and forth with your hands and rolling into a ball. Make sure the ball is compact as the peanut butter warms up and covers the oatmeal.  Roll into balls. Place rolled ball on a plate or wax paper. Repeat until all the mixture has been used up.

You can store the oat bites in an airtight container on the counter for up to 5 days. They last longer in the fridge and have a different texture when cold. 

Makes about 12 balls depending on size
