March Cooking Class Recipe - Cucumber, Tomato, Red Onion and Mint Salsa or Salad
INGREDIENTS
1 red onion, diced
4 larget cucumbers, peeled, sliced
1 pint cherry tomatoes, halved
1/4 cup red wine vinegar
2 tbs lemon juice
2 tbs sugar
2 tsp salt
pinch of pepper
1/4 cup mint leaves, chopped
DIRECTIONS
Combine sugar, vinegar, lemon juice salt, pepper, and onion in a mixing bowl. Let mixture sit at least 15 minutes to allow onions to soften and macerate. Add tomatoes, cucumber, and mint. Toss all together, and serve immediately. Note: you can switch the red wine vinegar for balsamic vinegar. You can also add avocado, olives, watermelon, feta, or any combination to the salsa or salad.
