Edamame Salad

Ingredients
1 lb frozen edamame (cook per package instructions)
1 red bell pepper, diced
½ cucumber, peeled, seeded and diced
⅓ cup jicama, diced
⅓ cup carrots, diced
¼ cup red onion, finely diced
¼ cup dried apricots, diced
1 Tbsp purple sage, chopped
1 tsp cinnamon
1 tsp cumin
1 Tbsp country Dijon mustard
3 Tbsp EVOO
4 Tbsp seasoned rice vinegar
Salt and pepper to taste
Directions
Mix all ingredients together in a large salad bowl. Let flavors meld for a few minutes and serve.
